As the Super Bowl approaches the tailgating recipes continue… There’s many ways to make them, cream cheese filled, cheddar cheese filled, breaded or wrapped in bacon. No one likes to choose between these, so lets makes some with EVERYTHING!!!
8 Large Jalapeño Poppers
- 4 Large Jalapeno Peppers
- 2 Pieces Turkey Bacon (Or if you like swine, go for the real stuff)
- 4 Oz Low-Fat Cream Cheese (If you can taste the difference go full fat)
- 1 Cup Shredded Mexican Cheese Blend
- 1 Egg Scrambled
- 1/2 Cup Flour
- 3/4 Cup Bread Crumbs (Or Panko Crumbs)
Let’s get started… Cut the peppers length wise leaving the stem attached. Then remove all the seeds and membrane. The spiciest part of the pepper is the seeds, so once you remove those and bake them they really are very mild.
Then, cook your Turkey Bacon (This one from Trader Joe’s is my personal favorite)… Let it cool then finely chop it.
Put the cream cheese (room temperature is easiest for mixing) into a bowl, add the Mexican cheese blend and mix well. Then, mix in your chopped bacon bits.
Using a spoon fill your hollowed peppers. I like to fill them so they are rounded and really stuffed
Then I line up three bowls for my breading… Put flour in one bowl, scramble the egg in the second and bread crumbs in the third… Like so…
First, dip in flour and cover them, but lightly tap to get the excess off. I ALWAYS try to keep one hand in the egg and one hand in the breading, but this always happens…
Oops!
Back to the peppers… After the breading use your Misto, to spray Extra Virgin Olive Oil. This will help get the breading to taste like they were fried without all the extra fat.
I use my cooking stoneware for everything, once again, the Pampered Chef one is my favorite… Pre-heat it in your oven to 350 degrees. Bake for 25-30 Minutes… AND…
Most people like to dip, so add some ranch or greek yogurt with a ranch packet mixed in… If you’d like to add some extra flavor put some more of your cooked bacon bits in the dip.
You can easily make this vegetarian but not including the bacon. Add this to your Super Bowl menu and it is sure to be a crowd pleaser. Thank you for stopping by Mrs. Training!
