Kosher Corn Dog Bites

Who doesn’t like corn dogs? Anybody? Vegetarians can put a faux/soy dog in this and enjoy it… Oh yeah, vegans… Well, yeah I don’t have an option for you… But, for the rest of the world… This is quick, cheap and no mess for the kids or a great tailgating/Super Bowl snack!

Make the Cornbread the same as in this recipe…

Jalapeño & Green Chile Cornbread Waffles

*Leave out the jalapeños for the kiddos 🙂

Preheat oven to 400 Degrees

Using a Mini Muffin or Mini Cupcake pan spray with Extra Virgin Olive Oil in your Misto

Fill cups half way with batter

Super Bowl Extravaganza

It’s that time of year, some of you are ecstatic you won’t have screaming and yelling in your house again every Sunday until Fall… Others, like myself will miss it, a lot. I love Football Sundays, it’s guaranteed time with my man, cooking all day, Coors Light, lucky shirts, and good old fashion American competition.

I love all things football, but for my soon to be Mr it is a religious experience. I don’t quite know what to label it, but it is a passion few have for anything in life. The fact that the San Francisco 49ers are playing takes this Sunday to a whole new level. Now we have food. I love food, but have a passion for cooking. I love finding ways to make our tailgating favorites not as fattening without compromising flavor… Not always possible to lower calories, but I love trying 🙂

This is a Girl’s guide to Football Sundays, and THE SUPER BOWL. You don’t have to like football in order to have a great time. Get a fun outfit, add some Team colors to your makeup and manicure. Veggie Chili & Cornbread Waffles

Yes, that is right, Chili and Cornbread Waffles! I LOVE chili in the winter, unlike soup, you aren’t hungry an hour later. Since the Chili is Vegan, it is low-fat and low calories… The Waffles, however, are more of a treat 🙂 I make a Big Ol’ Pot (that’s an official measurement term) of this each time and feast on it for days. It also freezes perfectly. I also like that when I want to indulge with Chili Cheese Fries, I don’t feel as bad when using this… Plus, it’s WAY tastier than anything you’ll ever buy in a jar. Make this easy and filling meal for the family during the week, or to fill the guys during Super Bowl. Everyone will love it!

Vegan Chili

  • 3 TBSP Extra Virgin Olive Oil
  • 1 Cup Diced Yellow Onion
  • 4 Cloves of Minced Garlic
  • 1/2 Cup of Diced Red Bell Pepper
  • 1/2 Cup of Diced Green Bell Pepper
  • 1 Diced Zucchini
  • 1 Cup of Diced Roma Tomatoes
  • 32 Oz of Vegetable Broth
  • 15 Oz Can of Tomato Sauce
  • 7 Oz of Fire Roasted Green Chilies
  • 1 1/2 Cups of Corn Kernels (canned, frozen or fresh)
  • 15 Oz Can Black Beans Rinsed
  • 15 Oz Can Red Kidney Beans Rinsed
  • 15 Oz Can White Beans Rinsed
  • 1 1/2 TBSP Chili Powder
  • 1 tsp Paprika
  • 1 tsp Kosher Salt
  • 1 tsp Cracked Black Pepper
  • 1 tsp Ground Cumin
  • 1 tsp Granulated Garlic

In a Large Pot, over Medium heat add Extra Virgin Olive Oil. Add Onions, Red & Green Bell Peppers, Garlic stir for 5 Minutes or until Onion becomes transparent.

Chili 1-4

Stir in Zucchini and cook for another 5 Minutes. Add Tomatoes, Vegetable Broth, Tomato Sauce, Green Chilies and Corn stirring for another 5 Minutes.

Chili 5-8

Add Black Beans, Kidney Beans, White Bean, Chili Powder, Paprika, Salt, Pepper, Cumin and Garlic. Bring to a light boil, cover the pot with a lid and simmer for 35 Minutes.

Cornbread Waffles (Not Vegan)

  • 2 – 15 Oz Boxes of Jiffy Cornbread Mix
  • 2 Large Eggs
  • 2/3 Cup of Milk
  • 7 Oz Fire Roasted Green Chilies
  • 1 Cup of Corn Kernels
  • 1 Cup Finely Shredded Cheddar
  • 2 TBSP Finely Chopped Jalapeño (You can leave out for the kiddos)

In a Medium bowl mix the Cornbread Mixes, Eggs and Milk. Then, add Green Chilies, Corn, Cheese and Jalapeño. Mix thoroughly.

Cornbread 1-4

Drop onto your Pre-Heated Waffle Iron and cook until browned.

Cornbread 5-6

Serve under or next to your Chili or other favorite soup. You can also cook these for 12 Minutes at 400 Degrees in a muffin pan if you don’t have a Waffle Iron.

Big, Easy – Mardi Gras Party

I love me some New Awlins food, so there is NO WAY I miss a chance for a feast every Fat Tuesday. This year more than floats and beads will be taking over the Big Easy. It’s Super Bowl XLVII in the Super Dome! What better way to start your Super Sunday than with the what the city is famous for?! I love planning my football sunday menu around home team specialties. Whether you’re celebrating Mardi Gras or Super Bowl… Here are some quick, easy and fun ways to add some culture to your day…



Beignet means ‘fried dough’ in French, which is why they are referred to as French Doughnuts by many. They are a little piece of heaven, hot fried dough in a bag of powdered sugar, YE S, PLEASE! They are commonly served at breakfast in many restaurants, but are served all day and all night at Café Du Monde in Jackson Square. You can order online, but if you can’t wait for delivery World Market has them for $3.99.

*If you make the dough the night before, not only will it make your morning easier, it helps the dough fluff up better 🙂


Chickory Coffee

Coffee & Chicory… Is amazing. Chicory is the root of the Endive leaf (basically salad) then roasted and ground up. During the Civil War in Louisiana, coffee was running out so they added Chicory to make it last longer and add flavor to watered down Coffee. It is strong and has a really dark roasted flavor, perfect thing to have with your beignets… Or after your Hurricanes 🙂 Buy at World Market for $8.99.


Hurricane Mix & Glass

Pat O’Brien’s is WORLD FAMOUS (Or at least that’s what the bottle says) for their Hurricane’s… Which, at this age, I can only enjoy one or two… Believe me your body with feel like a Hurricane hit it if you over do it with these bad boys. It’s very easy to make, equal parts Rum to Mix. Again, you can order this online or you can go to your local World Market. Make sure to grab some traditional Hurricane glasses while you’re there too.


  • 4 Soft Bread Rolls
  • Canola Oil
  • 1 1/2 LBS Large deveined Shrimp
  • 1 Egg
  • 2 TBSP Emeril’s Essence
  • 1 TBSP Flour
  • 1 Cup Bread Crumbs
  • 1 Large Hot House Tomato Thinly Sliced
  • Soft Lettuce (I prefer Butter Lettuce)
  • Tartar Sauce (Trader Joe’s is my favorite)
  • Hot Sauce
  • Spicy Mustard

Using a skillet, heat Canola Oil over medium/high heat. Mix the Emeril’s Essence, Flour and Bread crumbs in a bowl. Dip your Shrimp into egg and then your Bread crumb mixture. Place into skillet and fry for about 5 minutes or until golden perfection. Cut your bread rolls open and place tomato, lettuce and shrimp into each, then let everyone garnish with their choice of Tartar Sauce, Hot Sauce and Spicy Mustard. Quick, easy perfection. You can add a side of Zatarain’s Red Beans & Rice, it can be found at your local grocery store for $1-$2 and cooks in 15 minutes.

Kings Cake

The King’s cake traditionally was served from the Epiphany until Fat Tuesday (Carnival time). For fun at Mardi Gras the tradition has included the purple, green and yellow colored sprinkles. The reason the King cake is so fun is the baby you bake into it. The baby was supposed to symbolize the Baby Jesus since this is a cake from the Three Kings. Whoever gets the baby in their piece of cake is the ‘King’ or ‘Queen’ for the day. Also, if a woman gets the baby, they are supposed to host next years Mardi Gras party, and bake the next King cake. This box mix isn’t the best cake you’re ever going to eat, it’s really more like a pastry… But it’s fun, and who doesn’t want the chance to be the KING or QUEEN for the day? You can find this at World Market for $7.49.

DIY Engagement Ring Holder

I was a major connoisseur of cheap rings prior to my engagement ring… I LOVE me a chunky plastic flower ring… Or whatever great options Forever 21 has by the register. Mostly I loved that they really stood out and cost nothing, but the best thing was I didn’t have to be careful with them. I mean really, I spent more on my latte than this ring, who cares if I see it again. But when you get something out of the Forever 21 budget “to have and to hold” Ekkk. That’s a lot of pressure. I take it off while sleeping (if I eat something super salty), take a shower, wash the dishes… And I’m always looking for a “Safe Place” to set it. Then, I found the SUPER CUTE, SUPER CHEAP solution. You can have one by your bed, by all sinks and wherever else you are looking for a “Safe Place”.

The supplies are as follows:

SuppliesPoly Fil

Remove the glass or plastic window pane from the frame. Use the “fake family photo” as your template. Cut your fabric 1/2 inch border around your template. Then, using your glue gun get your first side glued to your template.

Steps 1-2

You’ll want to cut the fabric on the corners off at a 45 degree angle. So that when you glue the other sides down, the fabric lays flat and doesn’t bulk up.

Steps 3-4

Leave the top side open and stuff with your filler, get it full enough so you have a little pillow.

Steps 5-6

Then using your fingers, hold down the fabric to glue the last flap down. Then, you’re done with that.

Steps 7-8

Open your frame, insert the pillow… Fluffy side first.

Steps 9-10

Close the back of the frame and insert a corsage needle.

Steps 11-12

Then… Hang your ring in the cutest “Safe Place” ever…

Baked & Loaded Jalapeño Poppers

As the Super Bowl approaches the tailgating recipes continue… There’s many ways to make them, cream cheese filled, cheddar cheese filled, breaded or wrapped in bacon. No one likes to choose between these, so lets makes some with EVERYTHING!!!

8 Large Jalapeño Poppers

  • 4 Large Jalapeno Peppers
  • 2 Pieces Turkey Bacon (Or if you like swine, go for the real stuff)
  • 4 Oz Low-Fat Cream Cheese (If you can taste the difference go full fat)
  • 1 Cup Shredded Mexican Cheese Blend
  • 1 Egg Scrambled
  • 1/2 Cup Flour
  • 3/4 Cup Bread Crumbs (Or Panko Crumbs)

Let’s get started… Cut the peppers length wise leaving the stem attached. Then remove all the seeds and membrane. The spiciest part of the pepper is the seeds, so once you remove those and bake them they really are very mild.

Then, cook your Turkey Bacon (This one from Trader Joe’s is my personal favorite)… Let it cool then finely chop it.

Put the cream cheese (room temperature is easiest for mixing) into a bowl, add the Mexican cheese blend and mix well. Then, mix in your chopped bacon bits.

Using a spoon fill your hollowed peppers. I like to fill them so they are rounded and really stuffed 🙂

Then I line up three bowls for my breading… Put flour in one bowl, scramble the egg in the second and bread crumbs in the third… Like so…

First, dip in flour and cover them, but lightly tap to get the excess off. I ALWAYS try to keep one hand in the egg and one hand in the breading, but this always happens…

Back to the peppers… After the breading use your Misto, to spray Extra Virgin Olive Oil. This will help get the breading to taste like they were fried without all the extra fat.

Jalapeno Breaded

I use my cooking stoneware for everything, once again, the Pampered Chef one is my favorite… Pre-heat it in your oven to 350 degrees. Bake for 25-30 Minutes… AND…


Most people like to dip, so add some ranch or greek yogurt with a ranch packet mixed in… If you’d like to add some extra flavor put some more of your cooked bacon bits in the dip.

You can easily make this vegetarian but not including the bacon. Add this to your Super Bowl menu and it is sure to be a crowd pleaser. Thank you for stopping by Mrs. Training!


Steak Sliders On Garlic Toast

  • 2 lbs Flank or Skirt Steak (Or any other thin cut steak)
  • 1 TBSP Worcestershire Sauce
  • 1 TBSP Crushed Garlic
  • 1 tsp Kosher Salt
  • 1 tsp Cracked Pepper
  • 1 Gallon Sized Ziploc Bag
  • Cheddar Cheese Slices
  • 1 Large Yellow Onion
  • 1-2 TBSP Extra Virgin Olive Oil
  • 1 Stick Unsalted Butter
  • Chopped Garlic
  • Soft Sandwich Rolls

I bought the steak in bulk and divided into ziplock bags, you can marinate before you freeze or after you thaw. Marinade is a TBSP of Worchestershire Sauce, TBSP of crushed garlic, tsp kosher salt and tsp fresh cracked pepper. Marinade it right in the bag, less dishes 🙂

Then, over medium high heat, in a skillet pan, put sliced onion, 1-2 TBSP of Extra Virgin Olive Oil for 10-15 minutes.

Now for the steak, you can grill inside or out… (Depending on how far you are into football season/ outdoor weather is my deciding factor) So for indoor, I keep it kosher and line up my two Panini grills like so… If you’re not kosher, my fiancé, or any other guys out there you can use one grill.

Turn your steak grill onto the highest heat setting. And your bread grill onto medium-high. (You can also toast the bread but it does make it more crunchy)

Melt the butter with your FRESHLY chopped garlic (DON’T be one of those people who buys minced garlic in a jar, its gross, and the flavor will never be the same) in the microwave.


Then using a spoon or brush put on both sides of your roll of choice. Put face down onto your grill for a few minutes (really it’s up to your personal preference on crispness).

Then your steak… Since these grills are double-sided you don’t have to flip. And since the steak is thin, they really don’t need more than a minute total cook time… SCORE! Put the cheese on and leave for a few more second to help melt.

Then, put a couple of pieces of steak on each bun, add the sautéed onions and in this house BBQ sauce of choice… Sweet Baby Rays

Then you cut them in half so they’re slider size…

Well there you have it, another great game day meal or keep them full-sized and it’s dinner any night… But back to game day, you’re going to want to keep the protein in all your boy guests while they’re drinking (thinking they’re still in college). It really helps with the clean up after 🙂
