Super Bowl Extravaganza

30 Jan

It’s that time of year, some of you are ecstatic you won’t have screaming and yelling in your house again every Sunday until Fall… Others, like myself will miss it, a lot. I love Football Sundays, it’s guaranteed time with my man, cooking all day, Coors Light, lucky shirts, and good old fashion American competition.

I love all things football, but for my soon to be Mr it is a religious experience. I don’t quite know what to label it, but it is a passion few have for anything in life. The fact that the San Francisco 49ers are playing takes this Sunday to a whole new level. Now we have food. I love food, but have a passion for cooking. I love finding ways to make our tailgating favorites not as fattening without compromising flavor… Not always possible to lower calories, but I love trying 🙂

This is a Girl’s guide to Football Sundays, and THE SUPER BOWL. You don’t have to like football in order to have a great time. Get a fun outfit, add some Team colors to your makeup and manicure. If you’re hosting the party at your house, try making some of the crowd pleasing recipes below… I do Step-by-Step instructions to make it very easy. Have fun decorating the place and even get some betting going to add more fun. If you don’t care about the game, there is an equal amount of time of other things to watch, Alicia Keys is singing the National Anthem, Beyoncé is the Half Time performance and the BEST commercials you’ll see all year will be debuted. If that’s not enough to get you excited… You have a free pass to start drinking early and go overboard if you’d like… If you’re still not excited, well, I’m sure we’d never be friends.

TGIF Pizza Night

11 Jan

For as long as I can remember, Friday has been my favorite day of the week. In my childhood it meant pizza night in our house, friends sleeping over and TGIF on TV… What’s better than pizza? Eating it while watching Full House, Family Matters, Step-by-Step, Boy Meets World… Ahhhh the good ‘ol days 🙂 During high school my family owned a local pizza parlor that I worked at and LOVED working Friday nights. Everyone was happy Friday nights, parents were celebrating the end of a work week, kids ran around with a slice in hand and asking for more quarters for the video games and the smell… Mmmmmmm! Now as an adult if (and I usually do) have pizza on Friday night I can hear “Step by step, Day by Day, A fresh start over, A different hand to play…” playing in my head. I’m very nostalgic and love it when food or music takes me back to a memory. The better part of Friday pizza night now is I enjoy my pizza with a beer or glass of vino!

Mrs. Training is also about family planning (whether your family will be you and your spouse or include children) you should talk to each other about your favorite traditions growing up and which ones you want to continue. There may be new ones that you want to start… Maybe even Friday Pizza Night! As much as pizza night means to me I really can’t wait to share it with my future children. This is where we got to learn to make dough, cut ingredients, and put them together however we wanted our individual pizzas. If you’re looking to make it an educational night too, teach your kids the ingredients in Italian… Or any other language. So from my cucina to yours, let’s get started!

First, every kitchen should have some stoneware. You can find it anywhere from Target to William Sonoma. My personal favorite for pizza is this one from Pampered Chef . Using a stone is what gives you the restaurant quality crust.

Pizza StoneDough Recipe

  • 2 (1/4 Oz Packets) Instant Dry Active Yeast
  • 1 Cup Warm Water
  • 1 1/2 tsp Sugar
  • 2 TBSP Extra Virgin Olive Oil
  • 1 1/2 tsp Kosher Salt
  • 3 Cups Flour (Preferably Bread Flour)

In a large mixing bowl add Yeast, Warm Water and Sugar. Using a whisk mix well (it will start to get bubbly) and let it sit for 10 minutes. Add Olive Oil and Salt and whisk. Add 2 cups of the Flour and mix with a wooden spoon.

Dough 1-4

Sprinkle the remaining cup of flour on a smooth surface. Knead the remaining flour into your dough, knead  for 5 minutes. Then form the dough into a ball.

Dough 5-8

Using your Misto generously spray your ball of dough and bowl with Extra Virgin Olive Oil. Cover with Saran Wrap and place in a warm area of your kitchen for 2 hours. Dough should double in size. You can stretch out now and use or you can put in a ziplock a refrigerate for future use (great to do the night before so it’s ready to use after work) remove from refrigerator and wait until room temperature before using.

Dough 9-12

Pizza Sauce Recipe

  • 28 Oz San Marzano Whole Tomatoes
  • 1 TBSP Extra Virgin Olive Oil
  • 1 tsp Sugar
  • 1 tsp Dried Oregano
  • 1 tsp Italian Seasoning
  • 1 tsp Kosher Salt

In a small sauce pot on medium heat, add Tomatoes and crush them with your fingers. Add Olive Oil, Sugar, Oregano, Italian Seasoning and Salt. Cover and let simmer for 30 minutes.

Pizza Sauce

Mushroom & Olive

My most favorite topping combination is Mushroom and Olives. I like to sauté the mushrooms before making the pizza… Delicious! First cut the mushrooms into thick slices. In a medium-sized skillet over medium heat, add 1 TBSP of Extra Virgin Olive Oil, 1 TBSP of minced Garlic, 1 TBSP of Balsamic Vinegar and Mushrooms. Stir and sauté until mushrooms are soft, about 15 minutes.

If you are using a pizza stone, pre-heat it with your oven to 475 Degree. Once it is preheated remove the stone and put on a heat safe surface (I use my stove top), stretch out your dough and put on your stone. Add desired amount of sauce and WHOLE MILK Mozzarella either shredded or sliced. Then add your toppings and sprinkle with Dried Oregano.

Mushroom Olive 1-4

Bake at 475 Degrees for about 10 Minutes. This can be more or less depending on thickness of dough and amount of ingredients. Of course we all have different preference on crispness 🙂 So just watch carefully… And…

Mushroom Olive 5

Top with finely sliced Basil, Crushed Red Pepper Flakes, Chili Oil, Dried Oregano, Pecorino Romano

Margherita Pizza

There are many different ways to make this… I use regular Pizza Sauce instead of olive oil and tomatoes like other. Then add coarsely chopped Garlic, Fresh Basil Leaves and sliced Mozzarella.

Margherita 1-4

Bake at 475 degrees for about 8 Minutes. And…

Margherita 5

Top with finely sliced Basil, Crushed Red Pepper Flakes, Chili Oil, Dried Oregano, Pecorino Romano

If you’re running low on time, or decide to make pizza last-minute most grocery stores now carry a “Ready Made Fresh Dough”… My favorite is this one from Trader Joe’s… Which is only $1.29!!!

Plain Pizza Dough

If you are having a pizza night with your kids or friends, make your own pizza bar. Have everyone’s favorite toppings in small bowls so pizzas can be easily assembled and personal to each person. I promise if you make this a family tradition your kids will LOVE you now and continue it with their families 🙂 I hope you enjoyed this Blog post as much as I enjoyed writing it. THANK GOD ITS FRIDAY!
