Healthy & Hearty Chicken Tortilla Soup

It’s starting to actually feel like Fall here in Northern California. As soon as it gets cold I want soup it’s delicious and easy to make. Chicken tortilla soup is one of my favorites, there’s so much flavor, you can make it spicy (add diced jalapeño when sautéing vegetables :)) and like chili you get to add avocado, chopped onions and cheese too. Oh, and it’s really healthy so fill yourself up and don’t feel guilty 🙂

CHICKEN TORTILLA SOUP

INGREDIENTS

  • 1/3 Cup Extra Virgin Olive Oil, Divided
  • 1 Yellow or Red Onion Diced (Either works, whichever you prefer)
  • 1 Red Bell Pepper Diced
  • 1 Green Bell Pepper Diced
  • 4 Cloves of Minced Garlic
  • 3 Large Boneless Skinless Chicken Breasts
  • 1 TBSP Ground Cumin
  • 1 TBSP Chili Powder
  • 1 TBSP Granulated Garlic
  • 1/2 TBSP Kosher Salt
  • 1/2 TBSP Cracked Pepper
  • 10 Oz Can of Diced Tomatoes with Green Chiles
  • 8 Oz Can Fire Roasted Green Chiles Diced
  • 64 Oz Chicken Stock
  • (2) 14 Oz Cans of Black Beans Rinsed
  • 14 Oz Can of  Corn Kernels
  • 1/4 Cup Chopped Cilantro

OPTIONAL TOPPINGS

  • Tortilla Strips
  • Avocado
  • Diced Red Onion
  • Cilantro
  • Lime
  • Mexican Blend Shredded Cheese

DIRECTIONS

In a Large Stock Pot over Medium High Heat, add half of your EVOO. Add the Diced Onion, Red & Green Bell Peppers and Minced Garlic sauté for 5 Minutes.

In a Large Skillet over Medium High heat add remaining EVOO and Chicken Breasts. On both sides of the Chicken sprinkle the Ground Cumin, Chili Powder, Granulated Garlic, Salt & Pepper. Cook for 4-5 Minutes on both sides.

Using your handheld mixer, Shred the chicken breasts.

In your Large Pot, add Diced Tomatoes, Diced Green Chiles, Chicken Stock, Black Beans, Corn Kernels and Cilantro. Cover the Pot, bring to a boil and then reduced heat to low. Simmer for 40 Minutes. Before you serve it add more Salt & Pepper to your taste.

Easy Thai Yellow Vegetable Curry

As promised the Meatless Friday Dinner Recipes continue during Lent. Last week I made Mushroom Risotto in case you missed it check it out, very yummy. This one you are going to LOVE! Especially since I’ve made it VERY easy. I make this same recipe with thinly slice Chicken Brest also, it’s very versatile. I change which vegetables I am using depending on what is in season or on sale, DUH 🙂 I’m a BIG fan of Trader Joe’s… They have many of their own version with the different ethnic foods they carry. I know I’m a picky eater, so I’m very extreme with my likes and dislikes… SORRY I’M NOT SORRY. They either nail it… Or they do whatever it is that they did with their “version” of Pirate’s Booty… Which in itself is a travesty… If you can’t get knock off Pirate’s Booty correct, then don’t do it, it’s just not right. Back to the subject, with this Yellow Curry, Trader Joe’s or TJ’s as I like to call it, NAILED IT! Their Red Curry is equally perfected I’m just a bigger fan of Yellow Curry in general.

THAI YELLOW CURRY RECIPE

  • 2 TBSN Extra Virgin Olive Oil
  • 1 Yellow Onion Thinly Sliced
  • 1 Cup Russet Potato Peeled & Cubed
  • 1 Medium Carrot Peeled & Thinly Sliced
  • 1 Red Bell Pepper Thinly Sliced
  • 8 Oz White Mushrooms Quartered
  • 2 Bottles Trader Joe’s Yellow Curry
  • 1 1/2 Cups Broccoli Steamed
  • 1/2 Can Corn Kernels
  • 1 Can Low Fat Coconut Milk
  • 1 Cup French Green Beans Steamed
  • 2 Inch Piece of Ginger Finely Chopped (Optional)
  • Fresh Chopped Basil (Optional)
  • Jasmine Rice or Brown Rice

In a Medium or Large Pot over Medium heat add Extra Virgin Olive Oil. Add Onion and Potato, cook for 2-3 Minutes. Add Carrot and cook another 5 Minutes.

Steps 1-2

Add Red Bell Pepper, stir for 2 Minutes, add Mushrooms and cook for 5 Minutes.

This is what the bottles look like from Trader Joe’s, their Coconut Milk is a good price as well.

TJ Curry & Coconut Milk

Add Yellow Curry Sauce and a half Bottle of Water to each Jar used. Mix in Broccoli.

Steps 5-6

Add Corn Kernels and desired amount of Coconut Milk. This all depends on the amount of spice you like. Just add a little at a time until it is exactly to your liking. Cook for 5 Minutes.

Step 7-8

Add Green Beans ( I like to cut them into smaller pieces so they are easily spooned when eating). Bring to a light Boil, cover with your lid and simmer for 20 Minutes.

Steps 9-10

If you like a little extra flavor/spice (Not for the kiddos) add Chopped Ginger before you bring to a Boil. This is one of my Italian Measurements… 🙂 I added “this much”… 🙂

Bowled Curry

Then you serve over Rice, Bread whatever you’d like. This Jasmine Rice is Pre-Cooked and just has to be Microwaved for 3 Minutes (Great for Work Lunches). You can also use Brown Rice which is the Mister’s preference.

My other favorite (I gave up wheat/flour for Lent so this is me day dreaming) thing to serve Curry over is Naan. Trader Joe’s has a great fresh Naan for $3.69.

It’s that time of year, some of you are ecstatic you won’t have screaming and yelling in your house again every Sunday until Fall… Others, like myself will miss it, a lot. I love Football Sundays, it’s guaranteed time with my man, cooking all day, Coors Light, lucky shirts, and good old fashion American competition.

I love all things football, but for my soon to be Mr it is a religious experience. I don’t quite know what to label it, but it is a passion few have for anything in life. The fact that the San Francisco 49ers are playing takes this Sunday to a whole new level. Now we have food. I love food, but have a passion for cooking. I love finding ways to make our tailgating favorites not as fattening without compromising flavor… Not always possible to lower calories, but I love trying 🙂

Veggie Chili & Cornbread Waffles

Yes, that is right, Chili and Cornbread Waffles! I LOVE chili in the winter, unlike soup, you aren’t hungry an hour later. Since the Chili is Vegan, it is low-fat and low calories… The Waffles, however, are more of a treat 🙂 I make a Big Ol’ Pot (that’s an official measurement term) of this each time and feast on it for days. It also freezes perfectly. I also like that when I want to indulge with Chili Cheese Fries, I don’t feel as bad when using this… Plus, it’s WAY tastier than anything you’ll ever buy in a jar. Make this easy and filling meal for the family during the week, or to fill the guys during Super Bowl. Everyone will love it!

Vegan Chili

  • 3 TBSP Extra Virgin Olive Oil
  • 1 Cup Diced Yellow Onion
  • 4 Cloves of Minced Garlic
  • 1/2 Cup of Diced Red Bell Pepper
  • 1/2 Cup of Diced Green Bell Pepper
  • 1 Diced Zucchini
  • 1 Cup of Diced Roma Tomatoes
  • 32 Oz of Vegetable Broth
  • 15 Oz Can of Tomato Sauce
  • 7 Oz of Fire Roasted Green Chilies
  • 1 1/2 Cups of Corn Kernels (canned, frozen or fresh)
  • 15 Oz Can Black Beans Rinsed
  • 15 Oz Can Red Kidney Beans Rinsed
  • 15 Oz Can White Beans Rinsed
  • 1 1/2 TBSP Chili Powder
  • 1 tsp Paprika
  • 1 tsp Kosher Salt
  • 1 tsp Cracked Black Pepper
  • 1 tsp Ground Cumin
  • 1 tsp Granulated Garlic

In a Large Pot, over Medium heat add Extra Virgin Olive Oil. Add Onions, Red & Green Bell Peppers, Garlic stir for 5 Minutes or until Onion becomes transparent.

Chili 1-4

Stir in Zucchini and cook for another 5 Minutes. Add Tomatoes, Vegetable Broth, Tomato Sauce, Green Chilies and Corn stirring for another 5 Minutes.

Chili 5-8

Add Black Beans, Kidney Beans, White Bean, Chili Powder, Paprika, Salt, Pepper, Cumin and Garlic. Bring to a light boil, cover the pot with a lid and simmer for 35 Minutes.

Cornbread Waffles (Not Vegan)

  • 2 – 15 Oz Boxes of Jiffy Cornbread Mix
  • 2 Large Eggs
  • 2/3 Cup of Milk
  • 7 Oz Fire Roasted Green Chilies
  • 1 Cup of Corn Kernels
  • 1 Cup Finely Shredded Cheddar
  • 2 TBSP Finely Chopped Jalapeño (You can leave out for the kiddos)

In a Medium bowl mix the Cornbread Mixes, Eggs and Milk. Then, add Green Chilies, Corn, Cheese and Jalapeño. Mix thoroughly.

Cornbread 1-4

Drop onto your Pre-Heated Waffle Iron and cook until browned.

Cornbread 5-6

Serve under or next to your Chili or other favorite soup. You can also cook these for 12 Minutes at 400 Degrees in a muffin pan if you don’t have a Waffle Iron.

Minestrone My Way

I don’t know about you… But I’ve been COLD lately. Like the kind of cold where the heater is on you take a hot shower, bundle up with UGGs on and you’re still cold! I also don’t like cooking when I’m this cold… It does after all require getting off the couch without my blankets. 🙂 But it’s worth it, because really nothing trumps homemade soup on a cold day. I’m going to give you a quick, cheap and delicious dinner.

Ingredients

  • 3 TBSP Extra Virgin Olive Oil
  • 1 Medium Onion Diced
  • 1 TBSP Minced Garlic
  • 2 Celery Stalks Sliced
  • 2 Medium Carrots Peeled and Sliced
  • 1 Large Potato Peeled and Diced
  • 1 1/2 Cups Chopped Green Beans (About 1″ Pieces)
  • 1 Zucchini Sliced
  • 64 Oz Chicken or Vegetable Broth
  • 1 TBSP Dried Italian Seasoning
  • 1 Bay Leaf
  • 1 TBSP Kosher Salt (I get all canned items ‘No Salt Added’)
  • Freshly Ground Pepper
  • 28 Oz Can of Diced Tomatoes (I prefer San Marzano tomatoes)
  • 15 Oz Can Kidney Beans (Drained and Rinsed)
  • 15 Oz Can Cannellini Beans (Drained and Rinsed)
  • 2 Cups Fresh Spinach or Kale
  • 1/4 Cup Finely Grated Parmesan Cheese

Optional Toppings: Grated Parmesan Cheese, Crushed Red Chili Flakes, Finely Chopped Basil, Croutons

Instructions

In a large pot, over medium heat, add Olive Oil and Onions. Stir until Onions are translucent, about 5 minutes. Add Garlic, Celery, Carrots and Potato and stir for another 5 minutes. Add green beans and zucchini, stir vegetables for a few minutes. Pour in broth and turn the heat up to medium-high. Add Italian Seasonings, Bay Leaf, Kosher Salt, Cracked Pepper to your taste. Then, add Diced Tomatoes with juice, Kidney Beans, Cannellini Beans and Spinach or Kale. Reduce heat to simmer and cover for 30 minutes. Stir in parmesan cheese and serve.

Minestrone

* If you like pasta in your Minestrone, cook it and add separately to your soup bowl. If you add to the pot it usually falls apart.

You should pair with Garlic Bread, Biscuits, Sliced Baguette or other warm carb of choice.
