Britney: Piece of Me (Everything you need to know)

This is a little off topic for me… But not really… Every wife needs her girl time. My best friend Lauren and I met in 7th grade, we’ve been avid Britney Spears fans since first hearing “Baby One More Time” on that radio. Last year when she announced that she would be doing a Vegas show, Lauren and I didn’t ask each other IF we were going, only WHEN are we going?! When the schedule was released we decided we would make this our 30th Birthday Trip together. My birthday is in December and hers is in January; we didn’t want to go during the holidays so we decided on the January 29th show. Now, I’m completely understand that not everyone is foaming at the mouth, over the top obsessed with her like Lauren and I. But I thought there were many things I could share with you to help you plan your trip to see her show. Whether it’s just cause you need something to do in Vegas or you want to have the time of your life.

We took the first flight in the morning… So nothing was open yet except Starbucks. We enjoyed our lattes until the Miracle Mile stores opened… First stop… The ABC Store 🙂 #sorryimnotsorry Corona for breakfast, no limes but they have lime juice. It’s the cheapest place for booze/snacks/smokes. They have single beers, bottles of wine and liquor. It’s a great place to stock your mini fridge, trust me.

TOTAL REWARDS

Before you do anything else, click on this link to join Total Rewards. I joined online and then got a card by showing my photo ID at the Total Rewards Customer Service on the Main Floor in the Planet Hollywood Casino. You still receive all the benefits of being a member while planning your trip. This came in handy when buying tickets, members got to buy advanced tickets 2 days prior to them being open to the public. Not sure if that’s even applicable now. Then when booking a room you got an additional discount as well. Many of the stores and restaurants on the strip offer Member discounts. They also scan your card when making purchases at participating Casinos, Shops, Hotels and Dining so that you can earn points for all your purchases. The points can then be redeemed for discounted and complimentary services. I love a discount, and when I went to the TR Customer Service to get my card, they let me spin a wheel of prizes and I got a free drink! That alone was worth signing up for 🙂

SEATING

We were lucky and got great seats the morning of the Total Rewards Pre-Sale on Ticketmaster.com. The Axis is a large venue for a Vegas show, seating is very important. If you’ve been to one of her concerts before you know that there are huge TVs everywhere and even if you’re in the nosebleed section you’ll be able to see everything perfectly… That is defiantly not the case here. The entire wall that the stage is on is one big TV, but they only show the dancers and graphics that go along with whatever set she is on at the time. So if you doing bring binoculars you will not see much of anything in the 200 Sections. The seating is not true stadium style either so the person in front of you is only slightly lower than you. When everyone is standing, if you get a tall guy in front of you… You’ll see nothing. Basically, if it’s important for you to see everything, like it was for us, spend the extra money on seats in the VIP section right in front of the stage or the 100s in a row close up.

The picture below is a still from a video we took… Sorry for the poor quality. I just wanted to give you an idea of how you can end up in a bad situation… Because there is very little incline on the seating rows you can end up behind someone MUCH taller than you and not be able to see anything. The audience is standing much of the concert so it could make or break the night. Especially if the 6’4″ guy in front of you with his girlfriend is on enough drugs to think… He is Britney that night.

Sooooo… There’s an entire Britney Store in the Miracle Mile Shops right outside of the Casino entrance. But you can also buy the things in her store by clicking this link. Everything you can buy inside the show venue is available in this store. So don’t think that you need to wait and see what is in there… There is actually more options in the store.

HOTEL

I had never stayed at Planet Hollywood before. It’s not the most glamorous hotel in Vegas (Trump, Wynn & Encore are my favorite) but it is very nice. I would definitely stay there again. You will also get an additional discount with your Total Rewards membership number. The best part about staying there it really gets you in the Britney spirit. It’s like staying at the Disneyland Hotel when you go to Disneyland. EVERYTHING has Britney on it… What is there not to love??? Magazines in your room, your room key, the elevator doors, casino tables… Died and gone to Britney heaven… (P.S. It was VERY nice to not have a long walk back to our room after the show, remember we weren’t on our 21st birthday trip).

PICTURE TAKING

You will go through metal detectors as soon as you enter the venue. They will have a step and repeat and they will take your picture, that you can purchase for $40 after the show. If there’s a possibility that you and your friend or friends will all want to buy one, you have to ask them to take multiple pictures, there is no way to get duplicates after the show… Unless you do it on your own afterwards. Yes, it’s expensive but it comes in a nice leather bifold album and makes for a great memento.

THE SHOW

After you go through the metal detectors and take pictures on the step and repeat, you walk into the lobby. There is the merchandize stand to buy t-shirts, posters, CDs, etc. Remember, every single thing you can buy inside the venue can be purchased for the same price and more options inside the store outside. Then there are costumes from different shows and music videos. There are drinks and snack available in the lobby also, get them prior to the show, and use the restroom before the show, because there is no intermission or breaks and it’s not that long. You don’t want to miss it 🙂

The show isn’t as long as you would assume by seeing how many songs there are, it lasted about an hour and 45 minutes… Possibly a little shorter. Not every song is sung from beginning to end, few are. She goes through multiple costume changes, the dancers do too (LOVE THAT). There are different stage sets throughout the show which are all switched so effortlessly its pretty amazing.

CONCLUSION 

It isn’t a cheap girls night, even if you live in Las Vegas. BUT, it was worth every single penny. Great night to add to your Vegas trip you already have planned, we saw bachelorette parties there too 🙂 We went to dinner before and I recommend Sugar Factory to you all as well. I got the Lemon Head Drop and Baked Macaroni & Cheese, my friend got the Jolly Rancher Martini and Veggie Burger. We both enjoy good food and everything was on point, service was great as well. We wanted to find a restaurant with a view of the Bellagio fountains, unfortunately we are vegetarians and all the restaurants I could find had very little for us to eat. The patio at Sugar Factory has outdoor heaters as well. Good food, great drinks and a view… All just a quick 5 minute walk from the concert venue. Need I say more? Faux Buffalo Wings

I have a serious infatuation with Buffalo Wing… The hotter the better, and keep them and the beer coming… Sooooo along come Lents again… I’m not having any meat or dairy… So really Pizza and Buffalo Wings are on my mind all day everyday. As you’re reading this, I’m somewhere daydreaming about what pizza I’m eating on Easter 🙂 I’m not into the Soy/Faux Cheese thing so I’m not going to worry about pizza, but I did find via interest and blog reading that cauliflower is a good buffalo wing alternative. Many of them used greek yogurt or almond milk… Again I’m not into the replacement dairy thing, I’d rather just not have it. So I made them yesterday, and then again today… I’m obsessed, and my meat loving husband is actually requesting them now 🙂 Win, Win… So my loyal followers… Here you go!

INGREDIENTS

  • 1 Head of Cauliflower
  • 1/4 Cup Extra Virgin Olive Oil
  • 1 TBSP Kosher Salt
  • 1 TBSP Coarsely Ground Black Pepper
  • 5 Cloves of Coarsely Chopped Garlic
  • 1/2 Cup Flour ( You can use a Gluten Free Flour)
  • 3/4 Cup Frank’s Red Hot Sauce

DIRECTIONS

Pre heat your oven to 450 degrees. Cut your Cauliflower into florets and put into a mixing bowl. Add the Extra Virgin Olive Oil, Kosher Salt, Coarsely Ground Black Pepper and Coarsely Chopped Garlic (DO NOT USE Minced Garlic in a Jar, it’s gross). Mix until all pieces are covered, then add in the flour and mix well.

Then lay them onto a baking pan. I suggest everyone gets a Silpat Mat for all their cooking and baking needs, it makes clean up easy and you don’t need to use any chemical based products to prevent sticking. Bake for 20-25 Minutes. I like to flip them half way through cooking.

Remove from the oven and add your Frank’s Red Hot Sauce, or other Hot Sauce (if you don’t like the best :)). Put back into the oven for 5 Minutes. Then, serve.

I’m personally not a wing dunker, so giving up dairy, I didn’t need a replacement Blue Cheese or Ranch Dressing. But I know that there are many Vegan options for dressings, I just can’t recommend one since I don’t like the dairy or dairy free options. Mushroom & Pesto Spaghetti Squash

Happy Monday Readers! I could eat Pasta everyday, but then, well… I’d look like I eat pasta everyday. Spaghetti Squash is what they serve in Carb Rehab. You can cook it and eat with EVOO & Parmesan or with Meatballs & Marinara. It’s truly amazing and takes on the flavor of whatever it is topped with. You can also cook a few ahead of time and refrigerate them to make dinner time quick and easy. I hope you love my Fall Favorite as much as I do!

MUSHROOM & PESTO SPAGHETTI SQUASH

INGREDIENTS

  • 1 Spaghetti Squash
  • 1 TBSP Extra Virgin Olive Oil
  • Kosher Salt & Pepper
  • 4 Cloves Minced Garlic
  • 1/2 Cup Alfredo OR Mashed Avocado
  • 1 Cup Basil Pesto
  • 8 Oz Sliced Crimini Mushrooms
  • 1/4 Cup Low Fat Mozzarella (Optional)
  • Fresh Cut Basil

DIRECTIONS

Pre-heat your oven to 375 degrees.  Using a baking sheet either lay down aluminum foil or your Silpat, mine is from Martha Stewart for $24.99. (You can really find these anywhere that baking/kitchen gadgets are sold, they are awesome and every kitchen should have one.)

Cut your Spaghetti Squash horizontally in half. Using a large spoon scoop out all the seeds and stringy flesh. Drizzle with Extra Virgin Olive Oil OR spray with your Misto. Sprinkle Salt & Pepper all over, then turn them over so the inside is faced down. Cook for 35-40 Minutes.

Turn them  “Spaghetti Side” up and let them cool for 5 Minutes. While it’s cooling turn your oven to BROIL.

Using a fork, flake up all the Spaghetti.

In a Medium sized skillet, over Medium High heat add 1 TBSP of EVOO, Minced Garlic and your Sliced Mushrooms. I prefer to slice by hand so that I can make sure they’re thin and cook quickly. Sauté for 4-5 Minutes.

Then add your Pesto Sauce. You can add Alfredo Sauce or Avocado to make creamy. Cook for 3 Minutes.

Divide the Mushroom/Pesto Mix on the 2 Squash halves.

You can  top with Mozzarella or not, either way is delicious. Place in the Broiler for 4-5 Minutes.

Top with your Fresh Basil. You can either cut in half…

…or scoop out to plate either way is great.

This spaghetti squash can be topped with anything that you would put on regular spaghetti. Red sauce, meatballs, sausage, other vegetables… Anything you want, without the carb guilt 🙂

Cheesy Lasagna Cupcakes

It’s the first week of Spring and in Northern California its been 80 Degrees and gorgeous outside as we’ll as freezing and raining… So I wasn’t sure which way to go for Meatless Fridays. I made my Vegan Chili yesterday & we’ve been eating that to stay full and warm 🙂 But now it looks like its going to be nice out….? I’m not sure what the weather is doing but I’m ready for a bit of a guilty pleasure… 🙂 Portion control has been my biggest savor in my indulging while on my beach bride diet I mean lifestyle change 🙂 Also, trying I’m to make more “Skinny” Italian dishes so I don’t feel the need to cheat on my new “lifestyle”. I made the Mac & Cheese Cupcakes for Super Bowl which were such a HUGE hit… They still get daily hits on the Blog 🙂 So next Italian favorite in a perfectly portioned cupcake… Lasagna! This is kid friendly, easy, CHEAP and Delish! Also because of the size, these would be great appetizers for a party or Pot Luck. You could easily turn these into a carnivore delight. Add cooked Italian Sausage instead of Mushrooms & Zucchini. Lets get started…

Lasagna Cupcake Recipe

  • 24 Won Ton Wrappers
  • 1 Cup Fast & Easy Marinara Sauce Recipe (You may use a jar, IF you must)
  • 12 Slices of Zucchini
  • 1/2 Cup LIGHT Alfredo Sauce or Pesto Sauce
  • 6 Thinly Slicked Mushrooms
  • 1 Cup Italian Cheese Mixture (Or Mozzarella)
  • 1/4 Cup Parmesan-Romano Grated Cheese
  • Dried Oregano

INSTRUCTIONS

PRE HEAT Oven to 375 Degrees.

These are the Won Ton Wraps I found at Safeway (On sale for $2.00)

Won Ton Wraps

Slice your Mushrooms VERY thin and sauté over Medium heat with some Extra Virgin Olive Oil for a couple of minutes.

Slice your Zucchini thin, but not paper thin… Like, 1/8″ thickness.

Using your MISTO (Because you ALL better have one by now) spray your Cupcake pan with Extra Virgin Olive Oil.

Won Ton Wrapper One

You will need 2 Won Ton Wraps per cupcake.

Add 1 1/2 TBSP of Marinara to the bottom of each wrappers, then place a Zucchini slice on top.

Lasagna Cupcakes Steps 1-2

Then, add 1 TBSP of Alfredo or Pesto Sauce on the Zucchini. Top your Sauce of choice with Sautéed Mushrooms (Or Meat for those who wish).

Lasagna Cupcakes Steps 3-4

Top Mushrooms with a “Healthy” Pinch (One of my favorite measurements) of Italian Cheese Blend. Then, top your Cheese with a TBSP of your Marinara, Alfredo or Pesto Sauce (Whichever you prefer most).

Top Sauce of choice with Parmesan-Romano Blend and Dried Oregano.

Place a piece of Aluminum Foil on top of this, don’t tighten and secure around the edges, just lightly set on top. Place on the center rack of your Pre-Heated oven for 15 Minutes. Then, remove foil and continue to bake for 5 Minutes.

This is the rough part, because now they’ve filled your house with a yummy smell. But, you need to let them cool for about 10-15 Minutes… 😦

So easy, so quick and lets you get some DELISH in without all the guilt. I make a big green salad or steam a bunch of veggies as my main dish and enjoy one or two of these. Makes you feel naughty, but you still fit in your Skinny Jeans 🙂

We’ve only got one more Meatless Friday after this. It’s Good Friday and I know many of you will be hosting Easter at your house, so you don’t want to spend a lot of time or have a mess Friday night… I’ll have a great recipe for that. Don’t you worry!

Colcannon Potato Cakes

Top O’ Tha Mornin’ To Ya!

I’m a BIG St. Patrick’s Day fan… I lived in Chicago for two years and my holiday spirit and liver were trained to perfection. I’m not even sure that Ireland does St. Patty’s like Chicago does… The River is dyed GREEN! People fly from all over the world to be in Chicago for St. Patty’s… That is no exaggeration… Bars OPEN at 6 AM that morning before the Parades start and don’t close until 4 AM the next day… The first time I did it, I felt like I should’ve gotten a T-Shirt at the very least. You get one after a Marathon, why not one for you AND your liver surviving 22 Hours of Green Beer?! This is a picture of the 1st year. This is at 10 AM…

I can’t quite pull the 22 Hour celebration anymore…(God only knows how much I wish I could :() But I can celebrate in a whole new way… Mixing in some Irish Specialties. Since traditional Irish food is usually “Meat & Potatoes” I have to get a little creative since I don’t eat corned beef or fish and chips… I thought this would tie in perfectly with my Meatless Fridays during Lent. Which makes me wonder, since Ireland has so many Catholics, what do they eat on their Meatless Fridays??? Hmmmm… Well, maybe they will start making this dish, because it is SOOOOOO GOOD! I love carbs, we all know this by now, it’s a simple question. But what about fried potatoes?! YES PLEASE!!!! Latkes, Potato Pancakes, Fries, Tots, Oh My! So why not Colcannon Potato Pancakes? 🙂 First I will show you how to make just the Colcannon if you’d like to skip the breading and frying part 🙂

COLCANNON POTATOES RECIPE

INGREDIENTS

  • 3 LBS Small Golden Potatoes (I leave the skins on you don’t have too)
  • 2 TBSP Kosher Salt
  • 1 1/4 Sticks Unsalted Butter
  • 1 1/4 Cup Milk (You can use anything from NON Fat to Whipping Cream)
  • 6 Cups Coarsely Chopped Cabbage
  • 1 Cup Thinly Sliced Green Onion
  • 1 TBSP Kosher Salt
  • Freshly Cracked Pepper

INSTRUCTIONS

Clean potatoes, remove the skin if you prefer too. If you use small Gold potatoes there is no need, the skins are so thin that once they’re boiled the skin is as soft as the potato itself. In a Large pot place all potatoes at the bottom and fill with cold water so that the potatoes are covered with water 2 inches above them.  Add 2 TBSP of Salt to the water for boiling. Bring to a boil and let potatoes boil for 15-20 Minutes (Until you can stick a fork into the center). Pour water and potatoes into a strainer. Let them stay there until later.

Colcannon Steps 1-2

In the same Pot, over Medium-High heat add butter and let it completely melt before you add in the Cabbage.

Colcannon Steps 3-4

Stir Cabbage into melted butter, let it cook for 5 Minutes. Then, add Green Onion and cook for another minute.

Colcannon Steps 5-6

Pour in your Milk, then your cooked Potatoes. Using a butter knife begin to mash the Potatoes.

Colcannon Steps 7-8

Continue to mash by hand or with your electric mixer (the Kitchen Aid is my personal favorite). Then, serve as a side to any meal of choice with a dollop of Butter (if you’re not worried about the calories 🙂 LUCKY!)

Colcannon Steps 9-10

COLCANNON POTATO CAKE OR PANCAKES RECIPE (This made 8 Cakes)

INGREDIENTS

  • Vegetable Oil for frying
  • 2 Cups Colcannon Potatoes
  • 1/4 Cup All Purpose Flour
  • 1 Egg
  • 1/4 Cup Breadcrumbs & Extra for Outsides
  • Freshly Cracked Pepper
  • Kosher Salt

INSTRUCTIONS

In a Medium bowl add Colcannon, Egg, Flour and 1/4 Cup of Breadcrumbs. Mix throughly, add Cracked Pepper to your taste.

Colcannon Steps 11-12

Using your hands, form the mixture into a 1/4 Inch thick patty and dip into your additional Breadcrumbs.

In a Medium or Large Skillet over Medium heat, add Vegetable Oil. Cook your Cakes for 3-5 Minutes on each side (Time depends on your stove & personal preference to crispiness). Lightly sprinkle with Kosher Salt.

Colcannon Steps 13-14

Then, remember this is a St. Patty’s Vegetarian meal, so add a nice big Green Salad, Artichoke, Asparagus or other GREEN Vegetable to help even out the nutrition of this dinner. And here you go…
