Super Bowl Extravaganza

It’s that time of year, some of you are ecstatic you won’t have screaming and yelling in your house again every Sunday until Fall… Others, like myself will miss it, a lot. I love Football Sundays, it’s guaranteed time with my man, cooking all day, Coors Light, lucky shirts, and good old fashion American competition.

I love all things football, but for my soon to be Mr it is a religious experience. I don’t quite know what to label it, but it is a passion few have for anything in life. The fact that the San Francisco 49ers are playing takes this Sunday to a whole new level. Now we have food. I love food, but have a passion for cooking. I love finding ways to make our tailgating favorites not as fattening without compromising flavor… Not always possible to lower calories, but I love trying 🙂

This is a Girl’s guide to Football Sundays, and THE SUPER BOWL. You don’t have to like football in order to have a great time. Get a fun outfit, add some Team colors to your makeup and manicure. If you’re hosting the party at your house, try making some of the crowd pleasing recipes below… I do Step-by-Step instructions to make it very easy. Have fun decorating the place and even get some betting going to add more fun. If you don’t care about the game, there is an equal amount of time of other things to watch, Alicia Keys is singing the National Anthem, Beyoncé is the Half Time performance and the BEST commercials you’ll see all year will be debuted. If that’s not enough to get you excited… You have a free pass to start drinking early and go overboard if you’d like… If you’re still not excited, well, I’m sure we’d never be friends.

I grabbed some memorabilia from around the house to decorate the table… Napkins are from Party City (clearance at the end of the season last year) and the plates are Styrofoam (I know, I know… NOT Green, but look just like stadium plates ;)) are from Smart & Final and the Red burger baskets are from World Market 6 pack for $4.99 and the paper liners in assorted designs.

Baked Buffalo Wings

There’s not many foods I love more than Buffalo Wings… I prefer boneless, but, if cooked properly I love traditional wings as well. This works as a side, great hors d’oeuvres, potluck, dinner all by its self OR ’tis the season for tailgating. I only have a small deep fryer so it takes too long to make them in there. Also, it is messy and doesn’t leave the best smell in your kitchen. So here is how you can make these without dirtying up your kitchen.

Make sure you buy quality meat, chicken is not something you want to get cheap on… Instead buy in bulk and divide into freezer bags so they’re ready to go next time. I prefer Foster Farm’s Party Wings (these are fresh not from the frozen section).

15 Baked Buffalo Wings 

  • 15 raw, thawed party wings
  • 2 TBSP Extra Virgin Olive Oil
  • Pinch of both Salt & Pepper
  • 1/3 Cup Frank’s Red Hot Original Sauce
  • 1 TBSP Adobo sauce
  • 1 TBSP Honey (I use unfiltered, local honey)
  • 1 tsp Ground Cumin
  • 1 tsp Finely Diced Jalapeño
  • 1 tsp Chopped Garlic
  • 1/2 tsp Crushed Red Chili Flakes

Pre-heat your oven at 350 degrees. On a large baking sheet put a piece of aluminum foil (EASY clean up). Rinse your chicken wings and pat dry with a paper towel.  Place wings on the baking sheet drizzle Olive Oil on them and a good size pinch of both Salt & Pepper. Using your hand make sure each piece is completely covered.

Place in oven and cook for 45 minutes. Half way through turn over each chicken wing so it doesn’t stick and cooks evenly.

Steps 1-4

In a small skillet pan over Medium heat, combine Frank Red Hot Sauce, Adobo, Honey, Cumin, Jalapeño, Garlic and Red Chili Flakes. Stir for 5 minutes until blended and hot. Then, brush 3/4 of the sauce on the wings, let them sit for 15-30 minutes to soak up the sauce into the skin. Brush on the remaining 1/4 of sauce and place back into oven for 15 minutes. Then…

Step 5

Serve with celery and carrot sticks. Most people like to dip their wings, I don’t dip so I didn’t make it tonight… For a low-fat/low cal option mix either a Ranch packet or Blue Cheese Crumbles into Greek Yogurt.
